Tokubetsu Junmai-shu & Tokubetsu Hojozou-shu. (特別純米酒 & 特別本醸造酒)

 

Tokubetsu Junmai-shu & Tokubetsu Honjozo-shu are one of the premium sake, too.

 

Material – Tokubetsu Junmai-shu: Rice, Koji rice

Tokubetsu Honjozo-shu: Rice, Koji rice, Brewed alcohol

Koji rice ratio – 15% or more

Polishing ratio – 60% or less

The word “Tokubetsu” means special.

There are no clear rules for this brewing method. Each brewery decides whether to call it as “Tokubetsu(Special)” or not.

Examples of special brewing methods include;

*Brewed with a long low-temperature fermentation process.

*Made from special cultivated rice with minimal use of pesticides and chemical fertilizers.

*100% specific sake rice is used.

*Wooden tank pressing
