Junmai shu(純米酒)


Junmai-shu is one of the premium sake.

Material – rice, koji rice

Koji rice ratio – 15% or more

Polishing ratio – None(No regulation on rice polishing ratio)

Previously, the rice polishing ratio was supposed to be less than 70%.

The rice polishing ratio rule was eliminated in 2004 because it is possible to produce sake equal flavor to Junmai-shu even with a rice polishing ratio of 70% or more.

Jumnai-shu has no added brewing alcohol.
